Depression Era Recipes from Clara's Kitchen

A couple of week's ago I found this wonderful YouTube channel: Clara's Kitchen. She is a 94 year old grandmother making recipe videos about depression era recipes and memories. She so cute,  funny and the recipes sound really good to boot. This week Miss Maddy and I decided to try out her Baked Apple recipe.

It was fast, easy to make and Miss Maddy did most of the work but then refused to eat the actual apple. Her brothers make fast work of eating her portion though. She's the first of my children who flat out refuses to try things. I keep thinking the more that she is in the kitchen with me and taking part in the preparations that she will want to try stuff. But she's flat out refuses.

1. Wash and dry your apples.

2. Core your apples {this may be hard to do if you don't have an apple corer...we looked at every store in town and finally had to resort to borrowing my Mother-in-law's. Then place a bit of butter into the bottom end of each cored apple to make sure that the cinnamon and sugar do not fall out of the bottom.

3. Mix 3 Tablespoons of sugar with 1 Tablespoon of cinnamon. Depending on how many apples you are making you may have to double this part of the recipe. Stir to combine.

4. When you think that the cinnamon and sugar are combined...give it another stir.
Cause this is the fun part, you know.

5. Carefully spoon sugar mixture into cored apples.

6. Pour a little bit of water into the bottom of your pan so that the apples will not burn or stick.

Bake at 350 degrees for 30-45 minutes or until soft and mushy. I wish that we had left ours in for a bit longer but the kids were chopping at the bit and asking every five minutes what that delicious smell was. I absolutely love that part of making things like this - the whole house was filled with the smell of apples and cinnamon. Miss Maddy and I served our Baked Apples with vanilla ice cream - which she had no problem eating.

  1. These look fantastic! Apples are on sale at our local supermarket, and I bought two bags yesterday, this recipe will come in handy.
    As for my favorite recipe, we just bought an Easy Bake Oven, and last night we sliced up apples, covered them with honey and cinnamon and cooked them for 20 minutes. They were out of this world.

  3. I seriously just came across that video & was too impatient to watch it! I scrolled down my page a little farther and found this post! Go figure! Why didn't I just come to the 2 of you to begin with? That'll learn me! haha
