...We love mashed cauliflower instead of potatoes! <br /><br />Steam a pound of frozen florets for about 12-15 minutes in the microwave (you have to get them really soft!), then mash with half a stick of butter and half a package of cream cheese. Add salt and pepper and whatever seasonings you like.
