Pink Princess Crown Cookies for My Princess!!

Can we say Princess one more time?

Not in my book!! Since I had 3 boys before I had my little princess Miss Maddy - there is never gonna be enough pink and bling in the world for me!!



I was so excited to be able to review the Pink Princess Baking Gift Set

and what better thing for my princess to try out than cookies...although I am a pretty good cook - cookies have always been hard for me...I have dreams of lots of cookie making - and what better time to start than right now!


With Miss Maddy being 2 - I thought it was safer to do the parts of the recipe that involved my Kitchen Aid before bringing her into the kitchen...that girl's got lightening fast hands!!

Ingredients:

1/2 cup butter or margarine, softened
3/4 cup sugar
1 egg
1/2 teaspoon almond extract
1 tablespoon maraschino cherry juice
1 to 2 drops pink gel food coloring
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Crown shaped cookie cutter
Pink sugar crystals
Silver decorating balls



Let's Get Baking - as the cookbook says!

Preheat oven to 375 degrees.


Cream butter or margarine in a large mixing bowl. Add sugar and beat until light and fluffy.

Add almond extract - this is the first time that I have used it...it really gave the cookies a yummy almondy flavor.

Add maraschino cherry juice - again first time that I have used this with baking - it both added to the color of the cookies and the flavoring.

As a Food Network addict -- I have been looking for ceramic measuring spoons like Giada uses...on my husband's and my Anniversary trip to St. Louis, I was able to finally find some at Anthropologie!!

I must have really scared the poor girl working in the kitchen section with my shreek of delight!!

Add egg and a couple of drops of pink (I only had red) gel food coloring.

Combine flour, soda and salt in a separate bowl.

This was the first time using my flour after switching to this cute glass jar...guess what doesn't fit into the mouth of the jar.

After spooning the flour int the measuring cup...I used the back of the spoon to level it off.

Add flour mixture and blend well.

Look at beautiful pink color!!

Flatten out dough until it is about 1/4 inch thick, cover with plastic wrap, and put in freezer for 15 minutes to chill...


Now comes the fun part - making cookies with my little princess!!

Divide dough in half. Roll to 1/8 inch thick on lightly floured work area. Cut out with a crown-shaped cookie cutter and sprinkle liberally with pink sugar crystals. Press little silver decorating balls into the dough.

Place cookies 1 inch apart on cookie sheets sprayed with nonstick cooking spray. Bake for 8 to 10 minutes or until lightly browned.

All in all it was a pretty fun night!! Miss Maddy loved the rolling pin and crown cookie cutter - they were both just her size!!


I will say this - I did make a few mistakes:

I put the dough into the fridge instead of the freezer - this made cutting out the first batch of cookies very hard. They were very soft...I made sure to put the second batch into the freezer and it was smooth sailing from there.

I was also unable to find the silver decorating balls...to bad too - cause they were super cute on the cookies.

We give these cookies 5 spoons!!

This morning with my coffee -- they might even get a 6 out of 5 spoons!!

  1. I'm sorry - I missed the entire rest of your blog after I saw your measuring spoons. I now have some serious measuring spoon envy. And my fingers are itching to open up the Anthro website to see if they still have them!!!

    Aside from that, love all the pretty pink and sparkles! Cookies sound so good right now!

  2. I noticed those too! very cool spoons miss melissa. Cookies always tast the best in the morning with your first or second cup of coffee :)

    I had 4 boys. Need I say miss maddie is a dream in her princess crown?
