The CEO's Slow Cooked Pulled Pork

I make this Crock Pot meal ALL of the time. Even this past Christmas, I chose to serve a different menu and went BBQ style with this tasty main dish. You can serve it so many ways--on top of greens, on a bun, hot or cold. It's perfect every time.



Ingredients
1 medium onion, chopped
4 cloves of garlic, minced
1/3 cup cider vinegar
1/4 cup packed brown sugar
I jar of Heinz 57 sauce
2 tablespoons cracked peppercorn
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
3-4 pounds of pork (I like to use a pork roast, but pork chops can work well, too)
soft sandwich buns, mini potato rolls, or ciabatta rolls, warmed

Directions
1. In 4 1/2- to 6-quart slow-cooker, stir onion, garlic, vinegar, brown sugar, Heinz 57 sauce, cracked peppercorn, Worcestershire, and salt until combined. Add pork to sauce mixture and turn to coat well with sauce.
2. Cover slow cooker with lid and cook pork mixture on low setting as manufacturer directs, 8 to 10 hours or until pork is very tender. (or 4-6 hours on high)
3. With tongs, transfer pork to large dish. Turn setting on slow cooker to high; cover and heat sauce to boiling to thicken and reduce slightly.
4. While sauce boils, with 2 forks, pull pork into shreds. Return shredded pork to slow cooker and toss with sauce to combine. Cover slow cooker and heat through on high setting if necessary. 5. Spoon mixture onto bread of choice. Serve sandwiches with pickles, potato chips, and potato salad if you'd like.

  2. Oh, I hadn't even thought of putting this over salad! That'd be perfect on a hot summer evening when I don't feel like standing over the stove, yummmm...
