Healthy Broccoli Salad

I've been swept away into Jamie Oliver's "Food Revolution"! There are many things that, at this point and time, I am choosing not to change--like the occassional drive thru at Wendys, or my 3 cookies before bed--but there are a lot of things that I've decided to become more conscious about because of the many topics I've seen him discuss. One of them is making my favorite recipes healthier.

We happen to love Cold Broccoli Salad. What started out as a great side dish during BBQ season turned into a lovingly delicious year-round side in our house. But, when loaded with mayo, bacon and nuts, you kinda take the healthy out of the broccoli!

So here is my revised recipe. Hubby & I give it 3 spoons. It's delicious, don't get me wrong, but compared to the unhealthy version, it's no "5."

"Healthy" Broccoli Salad

Ingredients
1 Tbsp. Bacon Bits
2 heads fresh broccoli, chopped
1 1/2 cups Low-Fat Cheddar cheese, shredded
1/2 large red onion, chopped
1/4 cup red wine vinegar
1/8 cup white sugar
2 teaspoons ground black pepper
1 teaspoon salt
2/3 cup light mayonnaise (or plain yogurt)
1 teaspoon fresh lemon juice

Directions


1.In a large bowl, combine broccoli, cheese, bacon bits and onion.
2.Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

  1. Looks good! I just printed it & can't wait to try it. Believe it or not, both kids love broccoli, but plain broccoli gets old - they'll love this! Thanks!
