Easy Quesadilla's

I spend the afternoon yesterday "celebrating" Cinco de Mayo with my girlfriends over mexican food and margaritas while our kiddies played in the sprinkler! I thought I'd share with you my Easy Quesadilla Recipe in honor of our celebration! This is a recipe that is easily adapted to your liking, and can even be changed from one family member to the next when using the El Paso Quesadilla Maker like the one that I have shown below. I whip out this awesome kitchen tool at least once a week to stir up something spicy for supper!

The CEO's Easy Quesadilla's


Large Flour Tortillas {look for the Burrito size if using the Quesadilla Maker}
Shredded Cheddar Cheese
Salsa
Shredded Grilled Chicken
Spanish Rice {optional}


(1) Lightly spray the quesadilla maker {or large frying pan} with some cooking spray.

(2) Place down one flour tortilla and layer on your toppings--be sure to avoid placing too many towards the very center and too many towards the outer edges)

(3) Place another flour tortilla on top.

(4) Close Quesadilla maker and cook until the green light clicks on {about 3-5 minutes}. If you are frying this up, gently push a fork around the outer edge of the entire of the tortillas to "seal" them up. Proceed to fry them on each side until done.


Serve with a side of sour cream and extra salsa! Oh, and a margarita of course!
