Caramel Apple Cheesecake

This week's recipe was found while browsing through tasteofhome.com/ which is not only a good resource for recipes...but also a great place to find video recipe tutorials...which I LOVE!! It's so much easier to make a dish when you can follow along and check what your have created against what it actually supposed to look like!

Paula Dean shows how to put together food heaven in a graham cracker crust!!

That first bite/mouthful of food giggle of hers -- you will have one too once you try out this recipe!!

Caramel Apple Cheesecake by Paula Dean


Ingredients

1 can of apple pie filling
1 graham cracker crust
1 cup of caramel ice cream topping (might be less-but this is what I used)
2 softened 8 oz packages of cream cheese
1/2 cup sugar
1 tsp vanilla flavor
2 eggs
pecans for garnish


Place 3/4 of the apple pie filling into graham cracker crust spreading it out to cover the bottom of the crust.

Place the remaining portion into a small sauce pan with caramel ice cream topping on low heat.

Beat cream cheese until light. Then add sugar, vanilla flavor and 2 eggs -1 at a time.

Pour cheesecake filling on top of apple pie filling spreading it out to the edges of the crust.

Put cheesecake into a pre-heated 350 degree oven for 30 minutes or until set.

Once out of the oven... allow to cool then top with apple pie filling and caramel ice cream topping.

Garnish with pecans.

This was a simple recipe to assemble and while I am not a big fan of cheesecake (gasp I know) the rest of my family is...there is one lone little piece left!!

Whether you say P-cans or pecans...there is one thing that you will all agree on-- this one is a keeper!!

While Hubby tried this out when still warm from the oven...I elected to wait until it was completely cooled and set in the fridge...it was so GREAT...this is definitely going to become a go to dish for me -- I am already thinking about making it again to take to pot lucks and family celebrations!!



My Rating: 5 spoons...I wanted more but it was all gone!!
