The CEO's Easy Tortellini Soup

This has been my go-to dinner this winter. It's quick, easy & delicious! Best of all, there is barely any prep work and you use fresh, pre-packaged items so if you are short on time, you can still deliver a warm soup for your family.

"The CEO's Tortellini and Spinach Soup"

1 pound frozen tortellini
3 tsp. minced garlic
olive oil
1 can Diced Tomatoes
1 can Stewed Tomatoes with seasonings, blended
1 can Tomato sauce
1/2 10 oz. bag Spinach (cut, with stems off)
dash of Red Pepper Flakes
Shredded Italian Cheese Blend

In a large pan, heat some olive oil and lightly saute the minced garlic. Add all three cans of Tomato products and three cans (use one of the tomato cans) of water. Bring to a boil. Add the frozen tortellini, spinach and red pepper flakes. Bring to a boil until the tortellini is cooked. Spoon the soup into your bowl and top with a pinch or two of Italian Cheese Blend.

Pair this soup with some hot crescent rolls and enjoy! DaddyMac & I give it 5 spoons!!
