Valentine's Day Peanut Butter Brownie Cupcakes! Plus a Decorating Tip!!

Happy Valentine's Day Week!!

I wanted and needed something super easy to whip up for a Valentine's Day Treat!!

Mrs. Paula Dean to the rescue. She shows us in this video from tasteofhome.com





how to turn any brownie mix, one extra egg and some peanut butter chips into these:

Prepare a brownie mix adding one extra egg for cake like brownies.

Fill lined cup cake pan half full.

Place in about a tablespoon of peanut butter chips onto each cupcake.

Use rest of brownie mix to cover peanut butter chips.

Make sure to completely cover them.

Bake for 18 -20 minutes in a pre-heated 350 degree oven.



My family thought that these were really good...I even used the tip that follows to coat the tops of the brownie cupcakes with frosting -- wish I could show ya -- but they were the first ones to be eaten!

Cupcake Tip:

Want smooth professional looking cupcakes? I know that mine (pictured below) are not as smooth as a professionals...but hey it was my first try...I know that it's gonna take some practice!

But do you want to know how to achieve a smooth finished on frosted cupcakes?

I learned by watching this video!! (Please be careful while watching this video - there is one word that is not rated G.)



It's nothing more than heating up the frosting for about 15 seconds in 5 second intervals!!

The first few that I did -- weren't that smooth at all -- but once I realized that the frosting really needed to become a liquid the last few were awesomely smooth.

  8. I made these today....mmmm, yummy! I baked them a tad too long but they were still really good. My daughter said this was "the best brownie she ever ate in her whooooooooooollllllllleee life!"
